Tired of eating the same salad all the time? Change things up with this delicious strawberry arugula salad. This recipe can be served as a starter or an entire meal when complemented with a piece of chicken or salmon!
Strawberry Arugula Salad – makes 4 servings
Salad Ingredients:
• 1 bag of arugula
• 2 cups of spinach (optional)
• 1-2 cups of strawberries
• ½ cup of chopped pecans
• ¼ cup of hemp seeds
• ½ cup goat cheese crumbles
• Sprinkle of parmesan cheese (optional)
Dressing Ingredients:
• 3 tablespoons of olive oil
• 1 tablespoon of balsamic vinaigrette
• 1 teaspoon of garlic powder
• 1 tablespoon of dried basil
• 1 shallot, minced
• 1 tablespoon of honey or maple syrup
Directions:
- Add nuts to skillet and toast on low heat until slightly browned (no fat or salt needed).
- Clean arugula, spinach and strawberries.
- Chop strawberries as desired (cubes or slivers).
- Add greens, strawberries, hemp seeds and pecans to large bowl, set aside.
- Make dressing: Combine all ingredients in small bowl and whisk until dressing thickens (emulsifies).
- Add dressing to salad and mix until combined.
- Plate salad and sprinkle evenly with cheeses.
- Enjoy!
