One of the nation's fastest-growing build-your-own-meal concepts is coming to Center City next month with a Mediterranean twist from Austin, Texas.

Verts Mediterranean Grill announced that it will open its doors at 1601 Market St. on March 10.
The company was launched in 2011 by Michael Heyne and Dominik Stein, two graduates of the University of Texas at Austin who wanted to bring their favorite European dishes to the United States.
Customization is the driving force of the fast-casual concept, whose menu lets you build up from a base of salad, rice or quinoa. After that, it's all about your choice of proteins, toppings and sauces, with side items including fries, hummus and falafel.
They'll also be serving local craft beer and catering services.
At the grand opening, patrons will receive a free entrée from 11 a.m. to 9 p.m. The first 100 customers will take home Verts swag and all profits from day one will go to the CAPA Foundation, whose mission supports The Philadelphia High School for Creative and Performing Arts.
