Go meatless on your next taco night with this delicious mushroom tempeh tacos recipe.
Mushroom Tempeh Tacos – makes 6 servings
Ingredients:
• 1 tablespoon of olive oil
• 1 medium onion, diced
• 4 cloves of garlic, minced
• 16-ounce package of mushrooms, sliced
• 8-ounce package of tempeh
• 2 teaspoons each: chili powder and cumin
• 2 tablespoons of lime juice
• 1 15-ounce can of no-salt-added diced tomatoes
• Dash of low sodium soy sauce or Bragg’s liquid aminos
• Whole grain tortillas or crackers
Directions:
- Coat the bottom of a large frying pan with olive oil. Add onions and garlic and cook for about 3-5 minutes, or until softened.
- Add the mushrooms, tempeh, chili powder, and cumin. Cook for about 5-minutes, stirring occasionally.
- Add lime juice, tomatoes, and Bragg’s or soy sauce. Cook for about 5 minutes.
- Serve in whole grain tortillas or on whole grain crackers.
