Head butcher Heather Thomason will lead a class on whole hog butchering in Kensington Quarters' upstairs area on Thursday, May 5. With barbecue season coming up, learning a few things about cooking pig could come in handy.
Thomason will demonstrate whole animal butchering techniques, then dive into a discussion on various cuts and best cooking methods. While there, attendees can snack on bites from Kensington Quarters' charcuterie list and sip on sparkling wine.
Tickets for the class are $85 per person, with proceeds benefiting Fair Food, a nonprofit organization dedicated to bringing local food to the marketplace and promoting sustainable agriculture in the Delaware Valley region.
The hog used for the class will come from North Mountain Pastures in Perry County, Pennsylvania.
