If you’re a fan of coleslaw, you’re going to love this flavorful honey mustard Brussels sprout slaw recipe. It’s full of vitamins, minerals and Omega-3’s, potassium, protein and fiber; making it heart healthy and diabetic friendly!
Honey Mustard Brussels Sprout Slaw – makes 4 servings
Slaw:
• 1 pound of Brussels sprouts, trimmed, shredded
• 1 cup (~3 medium) carrots, shredded
• 1/3 cup of sliced almonds, toasted
• 1/3 cup of dried cranberries
• 1/3 cup of Parmesan cheese, shredded
Dressing:
• ¼ cup of olive oil
• 2 tablespoons of apple cider vinegar
• 1 tablespoon of honey
• 1 tablespoon of Dijon mustard
• 1 teaspoon of garlic powder
• 1 teaspoon of smoked paprika
• Pinch of salt
Directions:
- Place almonds on sauté pan, toast on low until browned.
- Wash sprouts, carrot and apple.
- Cut off the ends of the sprouts and any outer leaves as desired.
- Set food processor on slicing blade, then sprouts.
- Switch blade to shred and add carrots.
- Add sprouts and carrots to medium bowl.
- Finely chop apple, add to bowl.
- Finely shred cheese, add to bowl.
- Whisk together dressing ingredients until emulsified.
- Add dressing to salad, mix until fully combined and enjoy!
