Healthy Recipe: Spring Vegetable Stir-Fry

Spring Vegetable Stir-Fry – 4 servings

Ingredients:

1 teaspoon olive oil
½ cup onion, sliced
¼ teaspoon minced garlic
3 potatoes, quartered
¾ cup sliced carrots
¾ cup asparagus, chopped
¾ cup sugar snap peas
½ cup radishes, quartered
½ teaspoon dill, diced
Salt and pepper to taste

Directions:

  1. In a large skillet, sauté olive oil, onion and garlic for 5 minutes over medium-high heat.
  2. Stir in potatoes and carrots. Cover and lower and simmer for 5-7 minutes or until softened.
  3. Add remaining vegetables and spices. Cook for an additional 5-7 minutes.
