Healthy Recipe: Spinach-Ricotta Gnocchi

Treat yourself to a delicious dinner with this spinach and ricotta gnocchi recipe from Independence LIVE’s weekly healthy cooking class. Served with drizzled olive oil and shaved parmesan, this dish is sure to become a family favorite and can be made in less than 30 minutes.

Spinach-Ricotta Gnocchi – 8 servings

Ingredients:

• 1 package of frozen spinach
• 2 eggs
• 2 egg yolks
• 16 oz. of ricotta cheese
• ½ teaspoon of sea salt
• ¼ teaspoon of black pepper
• ¼ teaspoon of nutmeg
• 1 cup of Parmesan cheese, grated
• 1 cup of flour
• Garnish with olive oil
• Garnish with grated or shaved Parmesan cheese

Directions:

  1. Stir spinach, eggs, egg yolks, ricotta cheese, salt, pep-per, nutmeg, grated Parmesan-Reggiano and flour until just combined (very soft dough).
  2. On a lightly floured surface, gently shape the dough into ½ inch thick ropes.
  3. Cut into 1-inch pieces and cook in batches in a large pot of boiling, salted water, about 4 minutes.
  4. Serve with drizzled olive oil and shave Parmesan cheese.
  5. Enjoy!
