Perfect as a quick lunch or a starter at your next BBQ, this healthy homemade basil-pesto caprese salad is simple to make and big on taste!

Homemade Basil-Pesto Caprese Salad (4-6 servings)

Main Ingredients
2 cups of fresh basil leaves
1/4 cup of almonds
1-2 garlic cloves
1/2 cup of Parmesan cheese
1/2 cup of olive oil

Salad Ingredients:
1 container of grape or cherry tomatoes
8 oz. Mozzarella shredded cheese
1 tablespoon of Parmesan cheese
1 drizzle of olive oil

Directions:

  1. Place basil, almonds, garlic, Parmesan cheese and olive oil in food processor
  2. Chop until well blended
  3. Taste and add salt/pepper and lemon to taste. Place in refrigerator to chill until salad is complete
  4. Cut mozzarella into small cubes or as desired, slice tomatoes in half
  5. Add mozzarella and tomatoes to medium-size bowl, then add pesto and mix together
  6. Scoop onto plate, drizzle oil, sprinkle Parmesan cheese and enjoy!
