Perfect as a quick lunch or a starter at your next BBQ, this healthy homemade basil-pesto caprese salad is simple to make and big on taste!
Homemade Basil-Pesto Caprese Salad (4-6 servings)
Main Ingredients
2 cups of fresh basil leaves
1/4 cup of almonds
1-2 garlic cloves
1/2 cup of Parmesan cheese
1/2 cup of olive oil
Salad Ingredients:
1 container of grape or cherry tomatoes
8 oz. Mozzarella shredded cheese
1 tablespoon of Parmesan cheese
1 drizzle of olive oil
Directions:
- Place basil, almonds, garlic, Parmesan cheese and olive oil in food processor
- Chop until well blended
- Taste and add salt/pepper and lemon to taste. Place in refrigerator to chill until salad is complete
- Cut mozzarella into small cubes or as desired, slice tomatoes in half
- Add mozzarella and tomatoes to medium-size bowl, then add pesto and mix together
- Scoop onto plate, drizzle oil, sprinkle Parmesan cheese and enjoy!
