Eggplant Pizza – makes 2 servings
Ingredients:
1 wheat flatbread (ready-made)1 eggplant (chopped)
½ cup of olive oil
3 garlic cloves, diced, spread on pizza
½ cup of Mozzarella shredded cheese
Red onion
1 teaspoon of sea salt
Freshly ground pepper
Directions:
- Brush each side of the flatbread with olive oil, place on a sheet pan, then layer your toppings on.
- Place in oven for about 20 min at 400 °F.
