Not only is this dish low in fat, it’s also loaded with a variety of vitamins, antioxidants, and flavor. All that’s required is a few simple ingredients and less than 30 minutes of your time.
Baked Eggplant
Prep Time: 5 minutes • Cook time: 20 minutes • Servings: 2
Ingredients:
2-3 large eggplants, peeled & sliced thin
½ cup olive oil
3 garlic cloves
Sprig of parsley
Balsamic white vinegar
Directions:
- Pre-heat oven to 400°F and spray baking sheet
- Place slices of eggplant on a baking sheet
- Watch for ends to get a little dark, then remove (approximately 20 minutes)
- Place sliced in shallow baking dish with enough olive oil to cover and 3
tablespoons of vinegar
- Sprinkle with parsley
