Death before halftime: Buffalo chicken ala panhaas

Tortilla Chips File Art /for PhillyVoice

Buffalo Chicken Dip with a twist: double the cheese, add scrapple and serve it with our own grease-soaked salty tortilla chips.

Buffalo chicken dip is a staple at most Super Bowl parties. It is also one of the least healthy snacks. So how can we send it over the top? Double the cheese, add scrapple and serve it with our own grease-soaked salty tortilla chips. Scrapple makes everything better. Ask God when you meet him after gorging on this. He'll agree.

Buffalo Chicken ala Panhaas

You will need:

8 ounces softened cream cheese

2 cups shredded chicken

1/2 cup hot sauce

1/2 cup shredded cheddar

1/2 cup blue cheese dressing

1/4 cup fresh crumbled blue cheese

1 slice of scrapple 1.5-inch thick

Flour

Grill the chicken approximately 4 minutes a side over medium-high heat. Let cool and shred. Slice the scrapple down into 4 thin strips roughly 1/4-inch thick. Pat both sides of scrapple in flour. Shake off excess flour and place the scrapple into a large saucepan with hot oil. Cook until bottom is brown and crispy, then flip scrapple and cook until other side is done. Remove from pan and place on paper towel. Once cool, cut the scrapple into thin strips. Rotate the strips 45 degrees and cut them again at 1/4-inch intervals.

Preheat oven to 325 degrees. Combine all ingredients in a large mixing bowl. Transfer mixture to a 1-quart baking dish. Cook in oven for 20-25 minutes or until the dip is thoroughly heated. Garnish with a few scrapple crisps.

Now for the chips that will take this over-the-top. This is as easy as it gets and goes great with everything.

Simply Amazing Tortilla Chips

12 soft tortilla shells

Kosher salt

Frying oil

Cut shells into sixths. Using a basket or tongs, drop them in a pan of hot frying oil. Depending on how deep your oil is, you will have to flip chips (shallow oil) or stir them (deeper oil) so they will cook thoroughly on both sides. Once both sides start to get lightly browned, remove from pan and place on paper towel.  Salt immediately.

Have a great time at your party, and see you at the parade next February on Broad Street. E-A-G-L-E-S EAGLES!!
