Apple Blackberry Oat Muffins — makes 16 servings

Ingredients:

• 1 cup of white whole wheat flour (or all-purpose flour)
• 1 cup of rolled oats
• 1.5 teaspoons of baking soda
• 2 teaspoons of cinnamon
• 1/4 teaspoon of salt
• 1 apple, diced
• 1/2 cup of blackberries
• 3/4 cup of brown sugar, packed
• 4 tablespoons of olive oil
• 2 eggs, beaten
• 1 teaspoon of vanilla
• 1 cup of almond milk, unsweetened

Directions:

  1. Preheat oven to 350°F. Add liners to muffin tray or spray lightly with oil.
  2. Mix first five dry ingredients. Fold in diced apples and blackberries.
  3. In a separate bowl, mix sugar, olive oil, eggs, vanilla, and almond milk.
  4. Combine wet and dry ingredients until just blended (don’t over-mix!).
  5. Fill each muffin tin with batter. Bake for 15-20 minutes.
  6. For optional cinnamon-yogurt glaze: Mix 1/4 cup brown sugar, 1/4 cup non-fat Greek yogurt, and 1/2 teaspoon cinnamon. Heat for 10 seconds and drizzle over muffins.
  7. Handy Hint: It’s grill time! Cut muffins in half and heat for 1-2 minutes on a lightly-greased grill pan for a sweet surprise.
